To learn more about the world of Oklahoma cannabis edibles, we spoke to the man behind the magic at OSG, Chef Brandon Curtiss, whose job is a unique mix of culinary art and pharmaceutical science.

Meet Chef Brandon Curtiss

Brandon first found his way to the cannabis industry while recovering from a military injury. He tried to find ways to medicate that weren’t pharmaceuticals, and from then on, he’s been an advocate for cannabis.

After the military, he went to culinary school, and that’s where he began a journey that would ultimately take him to Oklahoma Sweet Grass.

After connecting with OSG CEO Chad Smith through faith at Life Church, Brandon came on board and redid the recipes and changed the way things were made. The rest is history.

What makes Oklahoma Sweet Grass so effective?

“To make an infusion, most people will start with an oil or butter. You need a fat source,” explains Brandon. The problem with traditional butters and oils is that they are only about 30-35% ‘bioavailable,’ meaning that for every 10mg of THC you consume, you will only absorb 3-3.5mg into your body.

Brandon started doing research through the National Institute of Health and the US Pharmacopeia patents to take their products to the next level, looking into how medicines are made. He wanted to learn more about the bioavailability of liquid medications and how they were delivered into the body.

You have to break it down to a certain size for your body to be able to absorb it properly and efficiently,” says Brandon. “That’s what we do here at OSG, and by using pharmaceutical bases, we create products that can go into your bloodstream instead of your digestive system. You’re getting 9.5 of every 10mg — that’s about three times stronger than other methods. The way we do it, it’s permeating your cell walls, and you get the full benefits of the medication.”

Creating great products anyone can enjoy

Throughout his research, Brandon was also particularly interested in how children’s medications are made. “Pharmaceutical companies can mask the flavor of the medicines. What if we could do the same things with our cannabis products? I wanted to develop a product for everybody—all the effect without the taste and odor.”

It turns out these same pharmaceutical principles work for cannabis products too, and when combined with Chef Brandon’s culinary chops, they result in some great products and incredible taste.

“We only source high quality. We like to focus on the true medicine,” shares Brandon. “I’ve toured a couple hundred grows, and we’ve only chosen to partner with a handful. We’re really selective. Working with Rocking Star Farm, Brandon explains that the quality of the cannabis means less work on the back-end: “When you make a concentrate, you typically need multiple passes to get to the desired potency. We might have 70-80% on a first pass, but we might need a second or third pass to get up into the high 90s. When we make concentrate with Rocking Star product, we get above 90% THC on the first pass! And it’s not just about flavor and potency; Brandon is especially careful about the cannabis he sources because bad ingredients can be dangerous to the consumer. “When you make an infusion, you’re going to concentrate down whatever you extract. That includes good medicinal compounds like THC, CBD, and terpenes, but it also includes pesticides, microbials, and any other harmful contaminants. Your raw ingredients might have 2 ppm (parts per million) of a pesticide, but if you concentrate it down, all of a sudden you might have 200 ppm of a pesticide in a concentrated form. That’s extremely dangerous to the patient.”

Putting it all into perspective

Brandon says that he’s in the business for the patients. “I feel like every day I get at least one or two people coming up to me telling me how my products have completely changed their life. Multiple people have told me how they got off opiates and other success stories.”

Brandon himself continues to use medicinal cannabis to manage pain from his military injury, and his wife also became a patient after breaking her back in a bad car accident. “She doesn’t use any other medications,” he explains. “All she does is cannabis throughout the day, and she’s completely pain-free. We have three kids under the age of 11, and we both go 18-20 hours a day. Cannabis is what helps us live that lifestyle.”
